Abstract
Abstract ENGLISH Value-added is an agricultural product that gains value due to the production process including processing, storage and distribution. Agricultural products have perishable properties, therefore a processing method is needed to create food diversity. Lack of public awareness in Kayumas Village towards the utilization of agricultural products, whereas if agricultural products are processed into a product ready for consumption can increase the higher selling value. This study aims to determine the amount of added value obtained in the business of processing ginger rhizomes into simplisia products of the Alun-alun Jaya farmer group in Kayumas Village, Arjasa District, Situbondo Regency. The data used are primary data and secondary data. Respondents were taken in this study by purposive sampling, namely in the agro-industry of the Alun-alun Jaya farmer group in Kayumas Village, Arjasa District, Situbondo Regency. The results showed that: the added value generated from processing ginger rhizomes into ginger simplisia products amounted to 36.5%.
